How we make our Sausage

Our resident Sausage Maker and Expert, James Hoke, explains the process for making sausage. James learned the sausage making process from his father Jim Hoke in 1999 and together the Hoke's continue this family tradtion daily. James has become a premiere sausage maker and has further perfected the process used at Mt. Angel Sausage Company.

The first step in the sausage making process is preparing the spices for the sausage mixture . . .

Next we prepare and grind the meats. . .

Then we'll mix the spcies with the meats combining the flavors with the protiens . . .

Links are then made using state of the art equipment designed to accuratley and efficiently fill the all-natural sausage casings . . .
